Fresh seafood is sustainably sourced, and the seasonally driven menu puts a big emphasis on fresh, organically grown fruits and vegetables, often brought in from local farms or the restaurant’s own ranch in the nearby Santa Ana Mountains. Burn off enough calories for dessert with a spin on the 1,222-square-foot dance floor, with live bands playing country music until the wee hours.
